I love to eat but I forget to eat when I’m busy. By the time I remember that I’m hungry I only have 10 minutes until I pass out. (I’m being a tad melodramatic but that’s how it feels.)
This meal is so quick, easy and it tastes delicious.
half a medium sized red onion
A handful of spinach
4 plum tomatoes
large flat mushroom
Mussels (Aldi has pre-cooked Mussels for less than £2. Save yourself the trouble of de-bearding)
White wine vinegar
handful of linguine pasta
tablespoon of Cream cheese (optional)
salt & pepper to taste
Boil your linguine and add your mussels to the pasta and simmer for 5 minutes once the pasta is nearly ready.
Drain some of the water and leave the rest in the pan for your sauce.
Fry the onions, garlic and mushrooms on the side then add a tablespoon of butter, soft cheese, a table spoon of white wine vinegar and a dash of lemon juice.
I like to add my salt & add pepper as I’m cooking the food but it’s completely up to you.
Mix the vegetables with the pasta and mussels then right at the end, add the spinach and plum tomatoes.
Serve piping hot and remember not to eat mussels that haven’t opened up.
