I love to eat but I forget to eat when I’m busy. By the time I remember that I’m hungry I only have 10 minutes until I pass out. (I’m being a tad melodramatic but that’s how it feels.) This meal is so quick, easy and it tastes delicious. Ingredients half a medium sized red onion A handful of spinach 4 plum tomatoes large flat mushroom Mussels (Aldi has pre-cooked Mussels for less than £2. Save yourself the trouble of de-bearding) Garlic Butter White wine…Continue Reading “Mussels in Minutes”

The best thing about smoothies is that you can prep the fruit in advance, get some zip locked bags and freeze it. Green Smoothie Bowl 1 banana handful of grapes handful of spinach 1/2 cup water and ice granola Chia seeds (I have no idea what their health benefits are I just love the…Continue Reading “Smoothie Bowls”
